Saville Lamb Curry


500g lamb cubes

1 onion, finely chopped

2 tomatoes, liquidised

2 tsp salt

¼ tsp turmeric powder

2 tsp cooking oil

4 curry leaves

2 tsp tomato paste

2 tsp Saville North Indian Curry Spice

1 tsp Saville Red Chilli Paste

1 tsp Ginger garlic paste (optional)

3 potatoes roughly cut into blocks

Fresh chopped coriander( For garnish)

2 cinnamon sticks

2 cardamom pods

2 cloves


Step 1: Add cooking oil, cinnamon, cardamom, cloves, and dried curry leaves into pot and allow to sizzle on medium heat infusing all the spices.

Step 2: Add chopped onions and braise till slightly brown.

Step 3: Add salt, turmeric, Saville North Indian Curry Spice, Saville Red Chilli Paste and ginger garlic, and braise into the onions on low heat.

Step 4: Add the lamb and fold together.

Step 5: Add 1 ½ cups of water and allow to cook for 30 minutes on medium heat.

Step 6: Add liquidised tomatoes, tomato paste and potatoes. Then add potatoes and allow to cook until soft.

Garnish with fresh coriander and enjoy over rice or roti.
