Hearty Vegetable Pie

Serves: 2

1) 2 onions roughly chopped

2) 1 cup frozen mixed veg

3) 2 cups finely chopped baby spinach

4) 1 Tbsp spoon of coconut oil

5) 1 tsp of salt or salt to taste

6) 1 tsp vegetable stock

7) 1 tsp of Saville Egyptian Dukkah

8) 1 tsp of Saville Red Chilli Paste (optional)

9) 1 tbs spoon of Saville vegetable tempering spice(vagar)

10) ¼ fresh cream

11) ½ cup grated mature cheddar cheese

12) 1 packet puff pastry (room temperature)

13) Black poppy seeds

14) Melted butter for glaze

15) 1 tsp of Saville Tuscan Mediterranean

16) 2 tbs spoons of flour


Step 1: in a medium size pot, add the coconut oil. Add the vegetable tempering spice (vagar).

Step 2: Add chopped onion , mixed veg, spinach and stir in.

Step 3: Add chilli paste, salt, Dukkah, vegetable stock, Mediterranean herb. Allow to cook for 10 minutes.

Step 4: Add flour, cheese and fresh cream.

Step 5: Cook further for 5 minutes

Step 6: Allow filling to cool

Step 7: Roll out pastry

Step 8: Add the filling to the pastry and fold

Step 9: Top with melted butter and poppy seeds

Bake on 200 degrees Celcius for 20-25 minutes until pie is golden brown.
